Dilip Ghosh, director of Nutriconnect in Sydney, Australia, concluded that by targeting certain foods, athletes can still get the recommended and needed amount of protein, iron, zinc and other nutrients necessary for health and performance from a vegetarian meal plan.
Ghosh says foods that meet those requirements to avoid common deficiencies include leafy vegetables, fruits, fortified breakfast cereals, soy drinks, nuts and milk products for those vegetarians who consume dairy products.

However, its important to remember that runners cant simply swap out an 8-ounce glass of milk for a plant based-alternative. Skim milk has a whole 8 grams of protein per serving, while soymilk only has 6 grams, and almond milk has but one.
