Use Yummy Yammy Mexican Sweet Potato Salsa to make a quick, easy, delicious and very nutrition-packed lunch in just a few minutes.
A Vermont company has just made answering that question a little easier, especially when you want something delicious that's not going to ruin your health.
Sweet potato salsa is a new concept in food that replaces typical tomato with flame-roasted sweet potato.
"It's kind of like I invented guacamole, made with sweet potatoes," explains Lisa Johnson, owner and founder of Yummy Yammy.
The sweet potato salsas, in Mexican, Tuscan and Moroccan flavors, have no tomato at all and are in convenient shelf-stable jars for a quick meal at work, school or home.
"The Mexican ones are flavored like a salsa, so it's great for tossing onto nachos or in a burrito," described Johnson. "But because it's sweet potato instead of tomato, our salsa is naturally a little sweeter, not as acidic, a little thicker and richer, and packed with nutrition while being low-calorie."
In fact, the whole 12 oz jar only has 250 calories, and enough filling for several lunch burritos. With a little cheese, popped in the microwave, it's a full meal in a classroom, at your desk, or at home between errands. Johnson describes customers who eat it even on the run in the car, with a bag of tortilla chips.
"Just one 2 tablespoon serving has half your Vitamin A for the day," Johnson offers. "It's got natural nutrition tomato-based salsas just can't touch. It's somewhere in between a salsa and a great homemade meal."
On her website, Johnson has just released videos showing how to use the new sweet potato salsas for quesadillas, nachos, eggs, pasta salad, and even breakfast eggs.
"Our salsas are really versatile," she explains. "Introducing them has been really fun, because it's the new food people want at the party. We just want to make people's busy lives a little easier and more delicious."
