One method has been invented by a mother of two in Vermont. Her "sweet potato salsas" have sweet potato as the main ingredient instead of typical tomato.
"Most people love sweet potato," claims Lisa Johnson, owner and founder of Yummy Yammy. "And there's so much respect for its nutrition. But there are always a few folks -- mostly men -- who don't care for the taste of a yam."
Johnson reports a high number of the balkers end up enjoying her salsas -- if they are daring enough to give it a try.
"Of the folks who usually don't care for sweeties but try my salsa anyway, about half are completely surprised to find that they love it 'cause it tastes like nacho topping, not like Thanksgiving dinner."
In fact, a recent Amazon reviewer of Johnson's product states just such an attitude: "Fantastic flavor - perfect spice mixture! LOVE LOVE LOVE IT! A must buy ... even if you don't like yams/sweet potatoes. I have never liked yams/sweet potatoes but love these salsas!"
On an internet site frequented by people eating a "paleo" diet, other suggestions included dousing sweet potatoes with bleu cheese, adding them to soup, and mixing them with spicy meat.
However it's done, it seems more possible now to gain the nutritional benefit of the Vitamin A rich tubers whether you like them or not.
